In the cellar, Louis carefully monitors the evolution of each wine vat. Most white wines are vinified and aged in stainless steel tanks to preserve their freshness and aromatic purity.
Red grape varieties—Pinot Noir, Merlot, Cabernet Franc, Marquette, and Frontenac Noir—are aged in French oak barrels, in varying proportions depending on the characteristics of each vintage.
